Rainy days are good for many things, and Saturday was no exception. I made some plans for the future, lounged on the couch and read the latest Economist, discussed the space/time continuum with my Mom and best of all, tested out a recipe for squash potstickers (thank you Martha). I had eaten some amazing ones over at Samovar Tea Lounge about a month ago and wanted to attempt making them back at the compound.
For 2 weeks I eyed the spaghetti squash I had bought when I hatched my master plan, and wondered what made it spaghetti-like. I seriously went through our entire arsenal of knives in order to break this freak fruit open and what did I find inside but a whole lotta stringy pulp (Duh.) Not the best consistency for potstickers filling but after I cooked it with soy sauce and brown sugar, added minced green onions and sesame seeds, it didn’t matter.
First lesson learned: don’t use rice paper wraps if you’re gonna fry them. That stuff will stick to EVERYthing.
I made attempt #2 with real wheat based wonton wraps and they were way easier to use. My only word of advice is to be ready to fry them quickly after stuffing because once these things dry out they’ll crack and it’s no fun to deal with. [Read: stuffing falling out in hot oil splattering all over the place.]
I think the choice to fry them was the deciding moment when they went from candidates for potstickers to full-fledged wontons. But the end result, thankfully, was some incredibly delicious wontons with a sweet and spicy filling and a tasty, crunchy shell. Throw some chives on the side and guten appetit!
